No-Bake Pumpkin Cheesecake
Fall is among us! It is now time to consume every pumpkin creation possible before it’s not socially acceptable anymore… and we have a recipe for you. Indulge in a delicious, protein packed, autumn favorite: pumpkin cheesecake! This quick and simple recipe will provide you with a delicious fall treat that won’t leave you feeling guilty.
- 1 Scoop Vanilla Premier Protein 100% Whey Powder
- ½ Cup Pumpkin Puree
- 1 tsp Vanilla Extract
- ½ tsp Pumpkin Pie Spice
- 8 ounces softened Fat-Free Cream Cheese
- 2 tsp of Stevia (or preferred sugar substitute)
- 1/4 Cup Heavy Whipping Cream
Begin by putting the pumpkin puree into a bowl and mix half of the protein powder. Once well combined, add the remaining protein powder and mix until fully incorporated. Next, add the pumpkin spice and vanilla extract and stir well. Place the mixture aside, and in another bowl beat the fat-free cream cheese until creamy. Once the cream cheese is ready, add in the pumpkin mixture and mix until it is evenly combined. Add the sugar substitute and mix on low.
Put your heavy whipping cream into a bowl and beat on high until you have peaks. Then, fold in the whipped cream into your cheesecake mix. Delegate the pumpkin cheesecake into serving sizes and chill until you are ready to enjoy! You may sprinkle cinnamon on top for an extra flare.
